Chicken meat is considered a very good source of proteins, and provides 67.6% of the daily value of protein in only 113 gr. The structure of the human beings and animals is based in proteins.






An effective way of reducing the fats associated with the consumption of meat, is a largest consumption of chicken meat.
The fine part of the chicken is the breast, which has less than half of the fat of a grade choice cut T-bone steak. The chicken fat is also less saturated fat than beef. However, eating chicken with the skin duplicates the amount of saturated fat in the meal. For this reason, it is better to remove the skin from chicken before cooking.




Scientific studies show that some sectors of the population, the elders specially, have poor proteins. But protein may be important to reduce the bone loss in the elderly. One of the studies showed that men and women from 70 to 90 years old with the increased intake of protein lost significantly less bone for a four years period that those who consumed less protein. The animal protein, as well as the general intake of protein, was linked the preservation of bones.
With data from 615 participants in the study of Osteoporosis of Framingham (MA), the researchers examined the relationship between the intake of protein in 1988-1999 and changes in bone mineral density four years later. They represented all the known factors that increase the risk of bone loss.
Participants who consumed the least amount of protein daily (equivalent half a chicken breast) had lost significantly more hip bone and spine four years later than those with the highest intakes (equivalent to about 9 ounces of steak and one cup of tuna salad). The group with the next lowest intake (equivalent to about 2 cups of cheese) lost more bone than the group with the highest intakes, but only at the hip.




Research published in the August 2004 edition of the magazine “Neurosurgery and Psychiatry”, indicates that regular consumption of foods abundant in niacin as chicken meat provides protection against the Alzheimer´s disease and the cognitive deterioration associated with aging.
Medical researchers in Chicago who were in charge of the aging project interviewed 3718 Chicago residents with 65 years old and upper about their diet, and, then, they tested their cognitive skills in the following six years. Those that consumed more niacin from foods (22 mg daily), were less prone to develop Alzheimer´s disease that those who consumed less than 70% (about 13 mg daily), and their rate of cognitive decline associated with age was significantly lower. Chicken meat is a very good source of vitamin B2, called niacin, which protects us against cancer. Some components of DNA require niacin, and the lack of this vitamin (as well as other B vitamins) has been directly related to appearance of genetic disorders (DNA). A portion equivalent four ounces of chicken meat provides 72% of the daily value of niacin.
Chicken meat is also a good source of trade elements, such as selenium. Selenium is essential to human health. It is an essential component in several important metabolic routes, including metabolism thyroid hormone, antioxidant defense systems and immune function. Evidence gathered from pilot studies, intervention trials and studies on animal models have suggested a strong inverse connection between cancer impact and the intake of selenium.
Several mechanics have been suggested to explain the activities of cancer prevention conducted by selenium. It has been shown that selenium is apt to induce the repair of DNA and synthesis of injured cells, to inhibit the proliferation of the cancer cells and to induce apoptosis (mechanism of self destruction of damaged cells, preventing the onset of diseases such as cancer).
In addition, selenium is incorporated into the active site of many proteins, including glutathione peroxidase, which may be the most important for cancer protection. One of the most powerful antioxidant enzymes in the body, glutathione peroxidase, is used by the liver to detoxify a wide variety of potentially harmful molecules. When glutathione peroxidase levels are too low, these toxic molecules aren´t detoxified and wreak havoc on the cells with they come in contact, damaging their DNA and cause the development of cancer cells. Four ounces of chicken meat supplied 40% of the daily value of selenium.




In addition to its role in energy metabolism, vitamin B6 plays an essential role as a methyl donor in the basic cellular process of methylation, whereby methyl groups are transferred from one molecule to another, resulting in the creation of several important active molecules.
When levels of B6 are insufficient, the availability of methyl groups is also limited. The result of the lack of methyl groups is that molecules which usually should be transformed into other types of molecules doesn´t do it, but they accumulate.
Homocysteine is so damaging to the walls of the vessels. High levels of this molecule are an important risk for cardiovascular disease. As noted above, 4 ounces of chicken meat supply one third (32%) of the daily requirement of Vitamine B6.
